If you've ever had a cup of coffee that seemed flat or overly bitter, the timing might be to blame—not your brewing skills. One of the most commonly overlooked aspects of great coffee is when you drink it after it’s roasted. At Franch Coffee, where we air roast every small batch with care, we often get the question: “How long should roasted coffee age before grinding and drinking?” Here’s what you need to know.


The Short Answer:

Let your freshly roasted coffee rest for 3 to 7 days before grinding and brewing. That’s the sweet spot where flavor and aroma begin to fully develop, and excess carbon dioxide (CO₂) has time to escape.


Why Resting Matters

Freshly roasted beans release CO₂—a process known as “degassing.” This gas can interfere with brewing, especially with methods like pour-over or espresso. If you brew too soon, the coffee can taste sour, sharp, or underdeveloped.

On the other hand, waiting too long (especially beyond 3–4 weeks after roasting) can cause the coffee to lose its complexity and aromatic oils, leading to a stale taste.


The Ideal Timeline

Here’s a general guideline for when to brew after roasting:

Dark Roast 2–4 days 3–10 days

Air-roasted beans (like ours) often degas slightly faster than drum-roasted beans, which means they can be ready to brew a bit sooner—without sacrificing taste.

 


Whole Beans vs. Pre-Ground

Always grind right before brewing if you can. Whole beans stay fresher longer because grinding exposes more surface area to oxygen, which speeds up the aging process. If you need to pre-grind, try to use the coffee within a few days for the best flavor.


Storage Tips to Maximize Freshness

  • Keep beans in an airtight container

  • Store in a cool, dark place (but not the fridge!)

  • Avoid moisture and light exposure

  • Use a resealable coffee bag with a one-way valve if available
